Tasting: José Pastor


When Laura Lorenzo enrolled in enology school at the age of 16, the wines of Galicia were mostly recognized as cheap table wines – if they were recognized at all. Today Laura has pieced together 4.5 hectares of owned & rented vineyards, and the majority of the vines are 80-120 years old. And Galicia is now lauded for its exceptional landscapes and small-scale producers making singular wines from minuscule parcels.

Laura describes her farming as “agro-ecology with minimal impact.” She’s a non-interventionist who ferments with native yeasts and uses minimal sulfur in the cellar. “We seek for the future through agriculture, which means years of work in the vineyard… Our grapes give good information, and let us know where the wine wants to go.”

Her non-traditional path and dedication to sustainable farming is typical of the winemakers that make up José Pastor’s portfolio. Thursday evening is a great opportunity to get a taste for the Pastor and the New Spain that’s emerging from unlikely places with bright, natural wines.
